Tucked into an unassuming corner in an industrial area of Edina is a true hidden gem. Cahill Bistro’s menu combines local comfort food and traditional South American dishes with a creative Ecuadorian flair that beguiles the restaurant’s unassuming location.

Cahill Bistro serves breakfast, lunch and dinner, all with a focus on Latin fusion. While the menu sports traditional Minnesota favorites like a cheeseburger or walleye platter, two dishes truly stand out: The lomo saltado (made Ecuadorian style with sautéed beef tips with red onions, tomatoes, bell peppers and served with achiote rice, fried yuca and balsamic greens) and poblano vegetariano (stuffed poblano pepper with fresh vegetables, black bean puree and drizzled with balsamic reduction) are culinary confections that will tickle your tastebuds with their creative take on beautifully plated Ecuadorian treats. If you’re looking for appetizers, don’t miss the empanadas or the ceviche; the Mexican tres leches is dynamite for dessert, and even the coffee sports a deep richness that reminds me of the highlands of Central America.

A Family Affair

Cahill Bistro is very much a family-run restaurant. In fact, Carlos Pinos and brothers Alberto and Christian opened the restaurant in 2017. Today, 12 family members work there. And over the last seven years, the restaurant has grown. So much so, in fact, that Pinos is about to open another restaurant in Kenyon, Minnesota, which is located between Faribault, Owatonna and Rochester in the southern part of the state. “The concept and menu will be similar at the new place,” he says, “but we hope to enter a market in which we’ll be a fresh, new dining option.” The Pinos are financing the purchase of the building in downtown Kenyon thanks to access to capital provided by LEDC and in conjunction with Northeast Bank.

Regardless of where you run into the Pinos’ captivating cuisine, you’re sure to enjoy fresh ingredients, generous portions, delicious dishes, and the warm hospitality that Carlos and his family have made into as much of a signature for their restaurant as their lovingly prepared dishes are.
